We do everything from scratch every day.” It’s not just about quantity; it’s about quality. One notable ingredient highlights this commitment: tomatoes. Lewis proudly shared that he grew 600 pounds of juicy tomatoes this year from his garden to supply his two restaurants. “That’s only about 100 pounds a day we can burn through in three days,” he remarked.

Lewis notes the value of building a nurturing culture, especially among college students who may be starting their first or second job. “It’s pretty awesome to help them learn how to work with somebody else when they graduate,” he stated.

Another crowd favorite, Indie’s Chicken, is also bracing for the football frenzy. Located on North Broadway, this eatery has been serving tantalizing meals to students and fans for decades. According to Director of Operations Alex Evanczyk, football game days are a sensory overload of food and fun. “It’s pretty much all day,” he explained. “People have parties starting early, and they go till late. We provide things to eat before the game, during the game, and after the game.” This weekend alone, they are gearing up to serve between 15,000 and 20,000 chicken wings! The mouthwatering aroma and vibrant atmosphere at Indie’s are simply irresistible.

Indie’s Chicken is known for their southern-style home cooking and warm hospitality. “We have one of the best, I call it families, in the restaurant business that we could ask for,” Evanczyk added. This sense of belonging and teamwork is palpable as you witness the restaurant staff working together like a well-oiled machine, ensuring that every wing meets their high standards for quality.
