Lexington, KY – A new pizza spot has made its debut alongside the bustling foodie corridor near Transylvania University. Dingbats Pizza officially opened its garage door at 471 Jefferson St. on October 22, bringing a unique twist to the local dining scene.
Dingbats specializes in Roman-style pizza, a type that features a slow-fermented dough akin to focaccia. Managing partner Andrew St. Clair describes the resulting texture as thicker, crispy on the bottom, and soft in the center. “It’s something a little different,” he stated. “I’m not sure anybody around here is doing it.”
The menu offers a variety of familiar but unique pizzas available by the slice, particularly six daily options along with daily specials. Patrons can also order custom whole pizzas in both Roman and traditional thin-crust styles, with choices that include vegetarian options as well as classics like pepperoni and Canadian bacon.
In addition to pizza, the menu features house-made all-beef meatballs and pretzels, aiming to cater to diverse tastes. Beverages include craft beer from West Sixth Brewery, with co-founder Brady Barlow serving as a partner in Dingbats.
Dingbats Pizza seeks to establish itself as a neighborhood destination, focusing on reasonable pricing. Barlow remarked, “I promise you won’t be hungry after a slice.” The restaurant has limited indoor seating but plans to utilize an extensive patio for outdoor dining in warmer weather. Delivery options will also be available.
The restaurant operates daily from noon to 10 p.m. and is situated in a vibrant culinary stretch that features other popular spots like West Sixth Brewing, Smithtown Seafood, and Sorella Gelateria.
Dingbats is the second venture from Barlow, who expanded his culinary repertoire this year with the opening of CIBON, a boutique wine and cheese bar.
